Last night we had stuffed pasta shells with meat sauce. Yummy! To go along with it, I served slices of French bread, but of course, I had about half a loaf of bread leftover. So, I set out to make these Egg-Free French Toast Sticks this morning.
French toast really works best with day old bread, so the loaf from last night was ideal. Here’s the recipe (look for a printable version at the bottom of this page):
In a bowl, combine
1 cup of milk
1 teaspoon of vanilla extract
3 tablespoons of flour
3 tablespoons of cornstarch
2 tablespoons of sugar
and 1 teaspoon of ground cinnamon.
Sorry I don’t have a lot of pictures of this part, but I had just gotten up and was a little slow on the uptake. 🙂
Anyway, mix them together with a wire whisk.
Taste the mixture. Add more vanilla extract and/or cinnamon to taste.
I like to use an electric skillet for foods of this sort, but you could just use a traditional skillet on the stove. Either way, heat 1 tablespoon of oil in the skillet on medium heat.
While the oil is heating, cut as many slices of bread as you want and slice them into strips.
Dip the strips into the batter, flipping gently to coat.
Place them in the skillet.
Cook the strips for 2-4 minutes on each side until golden brown. They don’t crisp up quite like French toast with egg in the batter, but they are very still very tasty!
When they’re done, remove the strips to a plate lined with a paper towel to cool for a moment.
If you’re going to cook more strips, you may want to add another tablespoon of oil to the skillet.
Place the strips on a plate with a dish of syrup for dipping. Sprinkle the strips with powdered sugar, if desired.
